Sausage and Vegetables Sheet Pan Dinner

1 smoked sausage

1 zucchini

1 onion

3 carrots

1 T olive oil

Salt and pepper to taste

  • Preheat oven to 400 degrees
  • Slice smoked sausage into coins (about as thick as a bottle cap); set aside
  • Slice vegetables into bite-sized pieces
  • Toss vegetables with oil
  • Spread vegetables on sheet pan
  • Add sausage to sheet pan
  • Bake for 25-30 minutes


Quick and Easy Chicken Quesadillas

2 cooked chicken breasts (or ½ rotisserie chicken), shredded or pulled

Flour tortillas

Shredded cheese

2 T Canola oil

  • Pour canola oil into a skillet on medium-high heat
  • Sprinkle cheese onto one half the tortilla
  • Cover cheese with chicken
  • Once oil begins to ripple, carefully place tortilla into skillet
  • Lightly sprinkle a layer of cheese onto chicken
  • Carefully fold the tortilla in half
  • Flip and continue skillet cooking for another 30-45 seconds, depending on desired flavor and crispness
  • Go supreme and add your favorite toppings: avocado, tomatoes, lettuce, sour cream
